Easy Green Chile Cornbread- from a gluten-free mix



Green Chile Cornbread

I happened to have a Gluten Free Pantry Yankee Cornbread Mix on hand, so I thought I would try it, and add my favorite cornbread additions - chopped green chiles, cheese and spices. I also added plain yogurt, lime juice and honey to make it moist, and spices to liven up the flavor. It turned out well. We grilled halved squares of it in a little bit of olive oil to accompany our Mexican Pumpkin Soup last night. Babycakes - this was too easy!


Easy Green Chile Cornbread



1 package Gluten Free Pantry Yankee Cornbread Mix
1/2 cup plain yogurt or sour cream
2/3 cup milk
1 squeeze fresh lime juice or lemon juice
1/4 cup light olive oil
3 tablespoons honey or brown sugar
1/2 cup chopped green chiles
2 large organic free-range eggs, lightly beaten
2/3 cup grated Parmesan or Cheddar cheese
1/2 teaspoon chili powder
Pinch or two of cayenne pepper or chili powder, to taste

Preheat oven to 425 degrees F. Line an 8x8-inch baking dish with foil and lightly oil the bottom and sides.


Easy Green Chile Cornbread

Dump the contents of the cornbread mix into a large mixing bowl. Add the rest of the ingredients and mix well by hand. Pour into the prepared baking dish and bake in the center of the oven for 25 minutes, or until a wooden pick inserted into the center emerges clean. Cool on a wire rack. 
Serve warm.

Make a hot artichoke dip and grab some gluten-free chips. Game on.

Gluten-Free Cinnamon Raisin Scones

A warm gluten-free scone. Hot tea. Breakfast bliss.

Are you sick of the snow yet? My heart goes out to you. So many of you have been hammered this winter. Spring will arrive this year not a moment too soon. My advice? Bake some scones. Scones are easy to throw together. The oven warms up the kitchen and chases off the chill. And in less than half an hour you have a tender gluten-free morsel to share and savor. Gently spiced with cinnamon and nutmeg, and studded with sweet bursts of raisins, I predict these cinnamon raisin scones will make you smile.

And speaking of predictions, Punxsutawney Phil better man up and predict an early respite come February 2. My fingers are crossed for all of you shoveling out from under. Not that I'm superstitious, or subscribe to the precognitive powers of double furred rodents, but. I remember the long dreary bouts of cold and gray all too well. I spent almost fifty-five years in the grip of Old Man Winter, praying the illustrious marmot would not see his shadow.

Will we have an early spring?

I hope so, Darlings. I hope so.

Today is all about muffins. Yes, muffins. And not just any muffins. Chocolate muffins worthy of a story.


Chapter 1.

The morning was cool and bright. It was going to be one of those quintessential Cape Cod autumn days. A day tourists swoon over. Worthy of a post card with The weather is sublime- wish you were here scrawled in black gel cursive between sips of a Hot Chocolate Sparrow latte. The sky was a cake bowl of cobalt blue with that particular pink edge to it that only painters notice, the blush that softened the tree line at the north end of the West Barnstable marsh gentling the heavy greens of the pines and oaks into a bluish, almost violet gray. 

She brushed her teeth with fennel toothpaste and spit into the low slung sink, pausing to breathe. A long inhale to slow her heart. The cottage was pin drop quiet. The boys had climbed the rubber lined steps into the school bus hours ago, peanut butter and honey sandwiches bagged, milk money in their pockets. She had waved from the street and watched them navigate the bus aisle in shadow, avoiding her maternal gaze, not turning to wave back. Too risky, she understood.

Gluten-Free Pizza Crust - My New Recipe

For years I've missed pizza. Not because there isn't gluten-free pizza available. It's out there. You can find it if you look hard enough. Take a gander in the frozen food aisle of your favorite natural market. Snoop around in the dairy case, next to the gluten-free bagels. You might even hit pay dirt at your local pizzeria. Especially if you happen to live in Arizona (Picazzo's gluten-free pizza is by far the best pizza joint fare I've tried). So yeah. There are choices.

Problem is, most gluten-free pizza sucks.

It's usually big on the chewy aspect. Or cracker crisp dry. With not much flavor. Yawningly bland. Certainly nothing to brag about. I mean, you wouldn't eat it if you didn't have to. You know what I'm sayin'? It's just that after years of pizza deprivation some of us are desperate for a decent slice. I'll try anything.

The lovely but modest and misunderstood maiden would then be forced to find needles in haystacks or pluck wool off surly sheep or sort millet seeds.

Gluten-Free Dinner Rolls

We've been slurping lots of soup this Spring while the temperatures hover well below my chilly bones preference of 72 degrees. I hate to complain about 52 degrees, but, honestly. I'm shivering like a kitten in a Steve Martin movie. This is L.A. not New Hampshire. Where is my sunshine and technicolor blue sky?

Hiding its good humor behind wrinkled duvets of fuzzy gray clouds, that's where.

So we make gluten-free soup.

But the soup needs a companion. Our potage is lonely. And so I play matchmaker. I've been inviting gluten-free roll recipes to come and play. I've been flirting with their quirks and grainy idiosyncrasies, trying to be a good host. Coaxing their prickly little batters into behaving. As in, taste GOOD. And I've had some almost there success. But nothing to brag about. Nothing blog worthy.

Until today. These rolls are a balance of whole grain flavor and softness. Just crusty enough. These were tender and lovely warm from the oven. Not gummy. Not heavy. Not too grainy.

Finished Recovering My Footstool


Woo-hoo!  I finally finished slip covering my little Parisian footstool!  It is photographing a bit bright, which annoying because I would love for you to see the actual color.  The fabric is a bit more rust than the photographs appears.  The fabric actually matches the rust/pumpkin color in the upholstery quite well.


I did a simple slip cover - pleats in the middle of each side of the skirt, a braid trim around the the top of the skirt, and tucks on the upper corners.


A photograph of the foot stool under the chair - again, the color is much more rust/pumpkin than this photo shows.


And finally Mr. Doug agreed to model the stool for you, as long as I only photographed his feet!

Gluten-Free Whole Grain Strawberry Muffins - Summer Goodness

Gluten-free whole grain strawberry muffins. Tender and fabulous.

Just in time for the weekend- a lovely new muffin. And not just any ordinary, ho-hum, run-of-the-mill, starchy, gluten-free muffin. Nope. A tender, whole grain, vanilla scented muffin that bursts with fresh strawberry flavor. Warm from the oven, these pleasantly grainy breakfast treats were pull-apart soft, with hot bites of juicy strawberry. Sweet- but not too sweet. I used pure maple syrup for the primary sweetener, and a mere quarter cup of organic cane sugar. And now for the best part.
